Everyone knows those lows during a day, where you are craving for something sweet and delicious. For such lows, I usually prepare energy balls. They are quickly prepared over the weekend, and you can have a large variety. If you use high-quality ingredients, they are also packed with vital substances e.g. protein or iron.
So I guess enough reasons to have a snack like that 🙂
- 1 cup cashew nuts soaked in water for 10 minutes
- 1 cup pecan nuts soaked in water for 10 minutes
- 2 tbsp maple syrup
- 3 tbsp coconut oil
- 15 pieces medjool dates
- 1 pinch salt
- 25 g raw cacao powder
- raspberry powder optional for dusting
Add all ingredients to a mixer and blend until you have a smooth consistency.
Stop occasionally to scrape down the sides.
Use a teaspoon to form small balls
Optional: You can roll the balls in extra cacao powder or any other powder you would like e.g. raspberry powder
Put energy balls into the fridge and let them cool a bit, before enjoying.
