Almond Cookies

Since I am doing my own almond milk, I usually have quite some almond flour, which I don’t want to throw away. As I do love snacking anyway I am using those leftovers for almond cookies now. This is a healthy yummy snack for in between, whenever I feel like I need something sweet for my soul. And the best part: Almonds are super healthy. They provide you with many unsaturated fatty acids, minerals such as magnesium, calcium, and copper as well as large amounts of vitamins B and E. Almonds have the right proportion of calcium and magnesium which leads to the fact that it can be absorbed and utilized by the body perfectly.

So eating the cookies does something to your soul and your body.

Servings 22 cookies


  • 200 g buckwheat flour
  • 110 g almond flour
  • 1/2 teaspoon vanilla
  • 1 teaspoon salt
  • 180 g coconut oil
  • 150 ml maple syrup
  • 80 g white almond butter


  1. Preheat the oven to 180 °C.
  2. Mix all ingredients in a food processor or with your hands until smooth.
  3. Lay a baking sheet with baking paper and take out portions (one tablespoon) of the dough and roll them to a ball with your hands. Place on the plate and press flat.
  4. Bake the cookies for about 15 minutes until they are a bit brownish.
  5. Leave to cool and enjoy.
